Grilled Ratatouille

Every week on Saturday, I look forward to our local Farmers Market! I also love to eat seasonally when I can, so this week, I thought, hmmm….what can I make with what is currently available seasonally from the Farmers Market? Once I noticed what was currently available (eggplant, summer squash, tomatoes, peppers), the idea of Ratatouille came to mind. I am not usually a huge Ratatouille fan because eggplant is not my favorite. However, I found this recipe from Bobby Flay, and I must say that this is super delicious! After watching and listening to one of our last lectures given by David Wolfe, a huge proponent of the raw food diet, I became intrigued with a whole new way of thinking that I have never been exposed to before. Garlic and Herb Mashed Cauliflower Ingredients: 1 head cauliflower, washed and cut into florets Salt & pepper to taste 2 Tablespoon unsalted pasture butter or ghee* ½ sweet or vidalia onion 1 teaspoon garlic, minced 1 tsp dry or 1 Tbsp fresh thyme, chopped 1 tsp dry or 1 Tbsp fresh rosemary, chopped   Process: Place cauliflower in a steamer basket in a pan, and steam until soft (about 10-12 minutes, test with a fork).
