Huevos Rancheros, Paleo Style Ingredients: 1 Tablespoon coconut oil (or 1 Tbsp olive oil)* 2 cloves garlic, minced ½ orange, red or yellow bell pepper, chopped ½ onion, chopped 1 jalapeño pepper, minced 2 vine-ripened tomatoes, diced 1-2 eggs Pork Chorizo* Avocado slices Cilantro (optional for garnish) Process: Heat a skillet over medium heat; add the chorizo and cook until no longer pink.
